Sunday Bake | Milk Chocolate & Hazelnut Praline Buche de Noel

I'm aware a Buche de Noel is a very Christmassy dessert, but while Winter is still in full force I thought it still deserved a feature! I made this first for my Flat Christmas with the guys, and then again for actual Christmas Day as it really is that good!!

The recipe is from Edd Kimber's Patisserie Made Simple which is SUCH a good book for amazing bakes. I highly recommend it! This recipe in particular is quite lengthy, but the steps are all actually quite simple. Everyone loved this dessert, as although it looks quite decadent it tastes so light! Perfect for Christmas Day when you're already stuffed with food....or any food-filled occasion really!

On with the recipe!

Ingredients:

For the chocolate sponge:
butter, for greasing
70g plain flour 
4 large eggs
100g caster sugar
30g cocoa powder

For the decoration:
125g hazelnuts, roughly chopped

For the praline buttercream:
50g milk chocolate 
125g caster sugar
1 large egg
2 large egg yolks
225g unsalted butter, at room temperature diced
4 tablespoons hazelnut praline paste 

For the hazelnut syrup:
40g caster sugar
2 tablespoons Frangelico (I just used Brandy though!)

Method:

Preheat the oven to 180C (160C fan oven/gas 4) and grease a 33x23cm rimmed baking tray and line with a sheet of baking parchment. Grease the parchment and then dust with a little flour, tipping out any excess. 

To make the sponge, put the eggs and sugar in a large bowl and, using an electric whisk, beat until pale and thick, so that when the beaters are lifted from the bowl the batter leaves a trail. Put the flour and cocoa powder in a bowl and mix together. In three additions, sift this mixture over the egg mixture, gently folding together with a spatula until fully combined. Pour this batter into the prepared baking tray and gently level out. Bake for 10-12 minutes until the cake springs back to the touch. 

Meanwhile, put a tea towel on a work surface and cover with a piece of baking parchment. Remove the cake from the oven and immediately turn it out onto the parchment. Peel off the parchment from the base of the cake, and then carefully roll the cake tightly, with the parchment and tea towel inside. Leave to cool, wrapped inside the tea towel, for 20 minutes. This will help the cake to unroll and re-roll later without cracking.

Put the hazelnuts for decoration on a baking tray and toast them in the oven for 10 minutes or until lightly browned. Set aside to cool.

To make the buttercream, melt the chocolate in a heatproof bowl over a pan of gently simmering water, making sure the base of the bowl doesn't touch the water. Leave to cool slightly. 

Meanwhile, put the sugar and 75ml water in a small pan over a medium high heat and bring to the boil. When the sugar has dissolved, cook until the syrup reaches 120C on an instant-read thermometer. When the syrup is around 115C, put the egg and yolks in a bowl and using an electric whisk, whisk until pale and thickened. Once the syrup reaches 120C, and with the whisk still running, carefully pour the syrup into the egg mixture. Continue whisking until the egg mixture has cooled to room temperature. 

Add the butter, a few pieces at a time, beating until you have a silky smooth buttercream. Once all the butter has been added, add the praline paste and the melted milk chocolate, mixing to combine. 

To make the syrup, put the sugar and 40ml water in a small pan and bring to the boil over a medium heat, then cook for 2 minutes. Remove the pan from the heat and pour in the Frangelico...or brandy! 

To assemble, unroll the sponge and remove the baking parchment, then brush liberally with the syrup. Spread three-quarters of the buttercream evenly across the sponge, then carefully roll it up tightly. Carefully lift the roll onto a serving plate and spread the remaining buttercream in a thin layer over the outside of the cake. To make the decoration, press the nuts into the buttercream, coating the cake. 

And voila!

Autumnal Thoughts.

Autumn is most definitely upon us. Scarves are back in my staple wardrobe, ankle boots are on and hand warming coffees are in full force. I'm in total Autumn mood and I'm loving it. Which is odd really, as 80% of the time I'm longing for summer and pretty floaty dresses! It seems that the older I've got the more I've begun to enjoy the crisp autumn mornings of October and November. With this in mind, I've compiled a list dedicated to my new-found love of all things Autumn.

- Cold mornings mean more excuses for a commuter coffee. A beverage in hand seems to be a cult on my morning train.
- The trees hit their peak in autumn with their beautiful leaves. This also means you get to crunch them soon, which is fun regardless of your age. Admit it, we've all made a slight detour to step on a particularly crunchy one!
- Cold evenings mean snuggly evenings in front of the TV with copious amounts of tea and cake. You've got to build up your winter layer of warmth after all...!
- Chunky knit jumpers. That is all.
- The countdown to Christmas officially begins once Autumn hits in my eyes. I've already bought a present, and planned my Christmas baking. Anyone else....?
- Rosy Cheeks. I may be alone on this, but I love that sort of flushed feel and look you get in Autumn when you've been outside. It almost reminds me of being a child again!
- Fireworks! I absolutely love a good firework display - though I HATE fireworks let off from back-gardens, those just terrify me! I always think they'll go wrong and end up flying at a house or person!
- Primark woolly leggings. Anyone else own these? The fleecy pyjama/legging combo that is just the COMFIEST thing ever on a cold day. They're my ultimate lounge day go-to.
- Putting on winter weight in secret, as you're constantly wearing oversized jumpers and big coats. Winning!
- Finally, a slightly strange one. That cold yet warm feeling you get when you're having a stroll in brisk air. Resonate with anyone?? haha

I've just written this list sitting in bed with a massive mug of tea, and I totally feel like I AM Autumn!

Magic at Hogwarts

Last Sunday me and my family went to the Harry Potter Studio Tour. We are a family of die-hard fans so it was SO exciting to be surrounded by the sets and props that seemed so familiar. I don't mean this to sound cheesy, but to me it felt almost homely being there. Growing up reading the books, they became a big part of my life and the characters and sets so familiar. It was amazing to see the crazy amount of detail that goes into the films, with props that may have only been in a split-second of the film made to the same high quality as vital props. At the time that we went to the tour it was still Christmas themed, which meant lot's of little extra touches and a lot of snow around the place! Hogwarts especially was beautiful! I hope you enjoy looking at the pictures I took:


If you are a Harry Potter fan I'd definitely recommend going! It was such a fun day out, and for £30 it was definitely worth the money! We spent a good 4/5 hours there and I still felt like I could have seen more!

DIY Christmas: Christmas Jumper Cards

I love giving/receiving cards and homemade cards are even better. I also love Christmas jumpers and don't think Christmas is complete without one. So when the idea to combine the two hit me, I knew I was on to a winner. HOW cute are they?? Not gonna lie, I'm more than a bit proud of how they came out. In some ways, I think they'd make great decorative bunting too! Although you might want to make them a tadge smaller for those purposes!

The jumper design options are literally endless, you can really do anything you want on them. These are just the first four I came up with, but I have ideas brimming for my next batch already! :)

To make these I bought a pack of 5 blank cards/envelopes from Hobbycraft and cut them into the Christmas jumper shape I wanted. I then drew the design shapes onto scraps of card that I had around the house and just glued them on. The blank cards were £2 from Hobbycraft, so at 40p a card I'd say that's a bargain!

If you don't regularly make things and therefore don't have bits of card to use, Hobbycraft do some great card packs in various colours to use. I'm sure you could find packs on Amazon as well!

My (Never Gonna Happen!) Christmas Wishlist.

I quite literally am always lusting over something and the thought of Christmas sends my brain into overdrive. My brain also seems to have ratherrr expensive taste, which sadly doesn't correspond with the reality of my bank account. So, instead of showing you the delightful things I've bought, I am instead showing you a wishlist of items that I can only hope to have in my dreams! And what a wonderful dream it would be!

My ultimate Designer handbag lust is the Micheal Kors Selma Satchel. However this above is quite literally the cutest thing ever as it is essentially a mini version! Entitled the Selma Studded Messenger Bag (1), it is firmly placed in my dream accessories drawer. I'm definitely a 'big' bag lover, so when it comes to evening bags I pretty much always use the same boring satchel so I'd absolutely loveeee to have this for the evenings! With such a neutral colour it'd look lovely with so many outfits and the studs give it a really good edge.

My laptop has been dead for a while and the past few months I've been borrowing stealing my Mum's. I so want my own laptop back, and I'd absolutely love a Macbook (2) to take its place! They are just the best in my eyes, and Windows just doesn't quite cut it anymore!

Any Made In Chelsea fans reading?? If so you might recognise the beautiful outfit as one of Sophie Hermann's creations. She's not a regular on MIC, but a firm friend of proper poshies Mark Francis and Victoria. She wore this outfit in a recent episode and I literally fell in love!! Its actually a bodysuit and skirt (3) together, but I think its beautiful. The structured neckline and padded statement shoulders pairs so well with the skater style skirt. The burgundy colour is so festive too!

One of my favourite designers ever ever is Rob Ryan. All his creations are so beautiful and whimsical, so when I saw that'd he collaborated with Tatty Devine I was seriously excited. I couldn't choose between these two rings as my favourite piece so I included them both. They're both 18-carot rose gold plated rings (4) with beautifully intricate designs. The Forever Love ring is such a lovely message and the Crown of Hearts ring reminds me of a fairytale crown. I absolutely adore them!!

Oh Laura Mercier. Be still my beating heart! What I would give to buy all of the things from the brand, but suffice to say its all a tadge too expensive at the moment! I've heard so much about the Body Souffles (5) that I couldn't not include them on my list! Just the word Souffle sounds invigorating and moisturising. I'd love to try the Créme de Pistache scent.

Lastly, the Nars At First Sight palette. One day I will own a Nars palette, but for now I shall just lust after them! The combination of shades in this palette is just so lovely, I know I'd get so much use out of it. Its also just so great for travelling, which is really handy as I spend a few nights a week at my boyfriends.

Cheeky Christmas Lush Haul!

With all the beauty vloggers videos of Lush Hauls at the moment I think its an impressive feat that A. I only bought 3 bath bombs and B. I resisted this long!! I mean really, what are they trying to do to my bank balance?! So with that in mind I thought I'd tempt you lovely readers into breaking open the money bank like I did!

Lush does Christmas products SO well in my eyes. Who can resist a cute penguin? Or a present with an ACTUAL surprise inside?! Its beyond me!

So after much deliberation and smelling so many different products I struggled to differentiate anything at all! I settled on:


With its cute little face, and orange blossom and Sicilian lemon scent I think it would've been a crime to leave The Christmas Penguin on the shelf. The penguins are based on the 'little penguins' found on Philips Island, Australia which are the smallest in the world!! So cute. It is apparently a good bubble bar for fans of The Olive Branch shower gel, but as I've never used it I can't say if I agree. As a bubble bar you're guaranteed mountains of bubbles, as it is essentially a bubble bath in solid form! Now I've just got to pluck up the courage to crumble his little face up in my bath....wish me luck?


I am ratherrrrrr obsessed with my Mint Julips Lip Scrub. So when I saw that Santa's Christmas version was on the shelves I had to at least inspect it! And once inspected, the justification that I needed scrub for home and one for handbag seemed logical and obvious. Right? The fact that the scrub is red and has tiny hearts in it is a winner in my eyes! The only downside to it is that its Cola flavoured, although still nice I'd much rather it of been something more christmassy like cinnamon. But, the wonderous softening effects still work so I'm a happy camper!


Cinders may not be the most exciting of Bath Bombs, considering I didn't purchase the melting snowman! But, I love the smell of Cinnamon and it makes me feel so christmassy I couldn't pass it up! There is also a scattering of popping candle to evoke the 'by the fireside' feelings! This is the only bath bomb from my collection that I've used so far and it was so lovely. I felt super relaxed, and it made my skin feel so soft. The smell was amazing in my bathroom too!


Finally, is the ultimate in Christmas bath bombs, The Golden Wonder! A glittery present, with a turquoise present inside loaded with stars! I am SO excited to try this one out. I'm saving it for a special occasion, when a long bath is all that will soothe me. It smells of champagne, orange, lime and cognac oil and is apparently the scent of Snowshowers Shower Jelly. I'll definitely let you know how I get on with this particular bomb. :)

I'm sure I'll be back in Lush before the Christmas products are gone for another year, but for now these have definitely given me enough excitement for a while. Have you bought any of the Christmas range??

Guess what I got?!

So I got a fancy pants new camera (Nikon D5100 if you're wondering!) for Christmas! I've wanted a DSLR for yonks, and as I've never been able to afford one myself I asked if I could pay half towards it and have it as a christmas present! Winning idea if I do say so myself! :) So you can expect a lot nicer photos on my blog from now on!

I've got a few make-up review posts lined up for the near future, but I thought I'd just share with you a few snippets from my Christmas! I hope you all had a wonderful time! :)

Holidays Are Coming.

Its Chhrissstmasssssss! (Imagine that in Noddy Holders voice!)


Its Christmas Eve and I'm feeling thoroughly festive! As such, I wanted to wish you all a very Merry Christmas!!
